Chocolate Chip Cookie Bars
The pan cookie we have sitting on our counter most weeks.

These days I am up by 5 every morning. I then care for my humans and try and earn a little money the rest of my waking hours. Most days, I pass out on the floor by my 3 year old’s bed, crawling bleary eyed on the floor towards the door somewhere in the middle of the night to try and make it to my own bed (ok, like 10pm, but it feels like the middle of the night). Suffice it to say, I don’t really have energy for complicated baking projects.
But, these cookie bars are not complicated. They are the opposite of complicated and we’re even taking the pesky act of scooping dough out of the equation. My 3 year old and I like to make these, squeezed in during her sister’s naptime between potty training and a little bit of Ms. Rachel. We keep the pan on the counter with a butter knife in the pan so you can just sneak a little piece here and there when you need a sugar fueled pick me up whether you live here or just stop by for a visit.
There’s really no wrong way to make these, but the way we like them best is with a combination of chips (white, butterscotch, chocolate, caramel-whatever just more than one) and a generous sprinkling of sea salt on the top. If you are a more together person than me, you could sprinkle the salt on after baking, but I can’t remember to do that so I just do it before.
